But Hawai`iʻs as far as she ever got. She did what a lot of people do - fell in love with the place, the people and the culture.
But Amy did something else very few others like her actually do - she got involved.
When she discovered it was illegal to sell or even give away hand pounded poi, one of the healthiest foods Hawaiians or anyone can eat, she used her budding legal skills to get the law changed.
And thatʻs when we met her at the Manoa campus of University of Hawai`i. We quickly discovered her dedication and boundless energy to make things right when it comes to poi and Hawai`iʻs culture.

When first year law student Amy Brinker moved from Galveston, Texas to attend the University of Hawai`i, she discovered to sell or even give away hand-pounded poi, the staple food of Hawaiians, was illegal. New to Hawai`i and not Hawaiian herself but wanting to make a difference, she did the only thing she could - she set out to change the law. Before long she found herself meeting with legislators who were asking her to craft a bill they could pass.
